We had the most AMAZING stay at the Grand Fiesta Coral Beach Resort right in the heart of the Hotel Zone of Cancun. Grand Fiesta Coral Beach Resort is an ALL-INCLUSIVE resort. It’s so HUGE that, even after spending 3 nights there, we didn’t explore every area.
Some of its amazing features include 12 restaurants and bars. Plus, they have fantastic, themed nights, daily and nightly entertainment and activities. The resort also has multiple swimming pools with swim-up bars, I couldn’t even count. Kids can enjoy the kids’ club. Plus, there’s a luxurious Day Spa for the parents.

VALLADOLID:
Marvel at the Beauty of Valladolid and its Cenotes & Ruins
NOTE: For the remainder of the itinerary, we suggest you hire a car, we booked ours through the 3rd party search site RentalCars.com. We find they always have the best rates as they search ALL car rental companies.
Next on our 2 week Mexico itinerary is Valladolid. Valladolid is a picturesque town, known for its colorful colonial architecture and quaint streets.
Venture inland a short drive to the iconic Chichen Itza, one of the New Seven Wonders of the World. Or visit one or many of the nearby Cenotes.
Valladolid is a gateway to both cultural treasures and natural wonders, making it an ideal base for exploring the rich offerings of the Yucatan Peninsula.

Hotel Fundadores, location was definitely one its many highlights. It was walking distance to Cenote Zaci (one of our favorite cenotes in Valladolid) as well as the colorful streets, shops, restaurants and city center of Valladolid.
We loved the charm of this hotel and it was one of our favorite hotels from our 2 week Mexico adventure.

Day 8-11 of your 2 week Mexico Itinerary
BACALAR
The Jewel of Mexico’s Riviera Maya
Nestled in the heart of Mexico’s Yucatan Peninsula, Bacalar is a hidden gem that promises a slice of paradise away from the bustling tourist trails. Often overshadowed by its more famous neighbors, Bacalar offers a serene escape with its captivating natural beauty, crystal-clear waters. If you’re ready to explore this enchanting destination, here’s a guide to make the most of your Bacalar adventure.
Where to stay in Bacalar
1. BUDGET: Hotel Sur Bacalar Located in the heart of the town and close to the lagoon, lots of restaurants and bars and public access jetty. This was where we stayed and we LOVED it.
2. MID RANGE: Bluebayou Bacalar Is located directly on the Lagoon and has kayaks and SUP boards available for guests to use freely. They also have their own private pier and are located only 10 km from Bacalar’s center.
3. BOUGIE: Khaban Bacalar Hotel Boutique Located on the lagoon front, with a stunning Suites, outdoor swimming pool, jetty and private beach area.
Things to do in Bacalar
- Swim in the Lake of Seven Colors The crown jewel of Bacalar is undoubtedly the Lake of Seven Colors (Laguna de Bacalar). This stunning freshwater lake boasts a mesmerizing palette of blues and greens, thanks to its varying depths and white sandy bottom.
- Relax at the Lagoon’s Shore Sometimes the best way to enjoy Bacalar is simply to relax by the lake. There are public jetties like the one below, perfect for enjoying the Lagoon. You will also find many local restaurants and beach clubs offer cozy spots right by the water where you can unwind with a cold drink in hand.
Take a Boat Tour To truly appreciate the splendor of Bacalar, YOU HAVE TO do a boat tour like this one we did. You will NOT REGRET IT!
- Visit the Bacalar Fort Step back in time with a visit to the Fort of San Felipe Bacalar, a historic fortress built in the 18th century to defend against pirate attacks. This well-preserved fort offers panoramic views of the lake.

#1 Los Rapidos was one of our favorite places we visited throughout out 3 weeks exploring the Yucatan and Quintana Roo Regions of Mexico.
- Explore the Cenotes: Bacalar is home to some of the most breathtaking ones. Cenote Esmeralda, with its emerald-green waters, is perfect for a refreshing dip. Cenote Azul, another local favorite, offers deep waters ideal for diving and snorkeling. These hidden gems are perfect for a day of swimming, and picnicking.
- Discover the Nearby Mayan Ruins Take a day trip to the ancient site of Kohunlich or explore the ruins of Dzibanché.

Day 11 – 14 – finishing off your itinerary
PLAYA DEL CARMEN / COZUMEL: Relax in Playa del Carmen and Cozumel
Playa Del Carmen was such a FUN PLACE, the overall vibe was incredible. We actually liked it more than Cancun and ALOT more than Tulum, which we actually didn’t rate at all and it didn’t even make our suggested 2 week Mexico itinerary.
Where to stay In Playa Del Carmen
We suggest staying as near to Fifth Avenue (Quinta Avenida) as possible. There are lots of options from beachfront resorts to central and city hotels. Staying close to Fifth Avenue will give you access to the bustling pedestrian street lined with shops, restaurants, cafes, and boutiques. It’s a great place for shopping, dining, and people-watching.
Our Accommodation Suggestion: Hacienda Maria Bonita
We stayed in Hacienda Maria Bonita. It was located 1 street from the Fifth Avenue precinct and had such a cool Mexican vibe.

Things to do in Playa Del Carmen
Cozumel Day Trip: Check out this day trip we went on, it was a definite HIGHLIGHT of our Mexico Itinerary.
We began our day by heading to Cozumel. From there, we boarded a speedboat to explore the top snorkeling spots and the starfish reef. We ended the day at Cielo Sand Bank, where we enjoyed margaritas and beers with the stingrays.

- Nightlife: Playa del Carmen offers a vibrant nightlife scene with beachfront bars, clubs, and entertainment venues. Experience live music and dancing.
